I need assistance in setting up the EHLO domain for an email client. Specifically, I want to configure “dummy.domain.com” as the EHLO domain for emails sent from the address sender@dummy.domain.com. Can anyone provide guidance on how to achieve this ?

That is not how an ehlo works. The ehlo is compared against a PTR record for the sending IP. If it doesn’t match you’ll have deliverability problems. Set it for the egress source.
